Cottage cheese muffins
A solid breakfast option: a bit savory (due to the added salt in the cottage
cheese, which can vary by brand), but pairs well with sweet add-ons.

Instructions
- Line or grease a muffin tin and heat the oven to 375 F (190 C).
- Sift 200 g all-purpose flour and mix with 2 tsp baking powder.
- In a large bowl, mix 1 lb cottage cheese, 4 eggs, 2 tsp sugar, 1/2 tsp
vanilla extract, and 4 tbsp avocado oil with a hand mixer.
- Add the flour mixture and mix until just combined.
- Divide the batter among the muffin cups and bake for 25-30 minutes,
until set, lightly golden, and no wet batter comes out on a toothpick.
- Cool in the tin for 5-10 minutes before removing.
- Serve with your favorite add-ons: bananas, berries, or toasted nuts. We
found that freshly-squeezed orange juice is a good substitute for maple
syrup.
