This is a recreation of a bowl I ordered in the summer of 2019 at the Sunspot restaurant in Knoxville. The dressing makes it all come together. A solid weeknight option.

Stuffed cabbage rolls
These require some effort but are delicious. Cooking 16 rolss means using 2 big pots at the same time. You can use either ground turkey, which had a milder texture when cooked, or pork, which is more flavorful.

Polish veggie salad
This is a classic that makes its way into countless Polish celebrations, from house parties to New Year's Eves to Easter breakfasts. This recipe uses homemade mayo, which is less vinegar-like in taste than store-bought versions.

Turkey meatballs in a tomato sauce
A relatively quick and easy recipe which pleases both kids and adults. Great with pasta (warm) or on bread (cold meatballs). The leftover sauce can be smeared on a toasted bread slice, covered with some grated cheese, and broiled for 2-3 minutes in the oven. It's really 3 dishes in one!

Polish pickle soup
This this soup, you absolutely need to use sour pickles (i.e., pickles from a salt brine). It tastes divine with some rolls.

Sauerkraut with porcini mushrooms
This vegan sauerkraut with mushrooms can be used as a dish on its own (for example over boiled potatoes or with a piece of bread), or as a starting point for Polish bigos which adds meat. Therefore, this is essentially a vegan bigos.
