In Poland, these are known as "naleśniki biszkoptowe", and are a wonderful
proposition for when you have a little bit more time in the morning. They
can also be treated as a very light breakfast for ailing tummies.

Instructions
Separate 2 eggs, putting the yolks in a large bowl and the egg whites in
a medium bowl.
Mix the egg yolks with 1 tbsp sugar and 3 tbsp water, plus 1/2 tsp
vanilla extract if using. Mix in 4 tbsp sifted flour, then set aside.
Beat the egg whites until firm.
Gently fold the egg whites into the egg yolk mixture.
Set a medium pan over very low heat and melt 1 tbsp butter in it.
Gently spread the pancake mixture over the pan. Cover the pan with a lid
and cook for about 10 minutes. Keep the heat very low so the pancake does
not burn.
Check whether the bottom of the pancake is well done. If so, gently turn
it over and fry on the other side for another 5 minutes.
