Hearty blueberry breakfast cobbler
This is a fast, easy, healthy, and filling breakfast. It can be packed
easily and reheated in the microwave. The tofu and apple absorb the juices
of the blueberry. The tofu nicely fills out the mix and provides some extra
protein. You can easily tune the ingredients to your liking.

Instructions
- Drain about 7 oz of tofu and put it in a tofu press for about 10
minutes.
- Peel and finely cube 1 apple.
- Heat up a large skillet and toss in the cubed apples. Cook them about 5
minutes to soften the apple.
- Cube the tofu into 1/4 cubes and add into the skillet, then cook for a
few more minutes.
- Add in the blueberries and let the whole thing simmer until the
blueberries burst and the juice permeates the apple and tofu. You may want
to add a bit a water to keep the mixture a little runny. Add sugar if you
want to make the mixture sweeter but keep in mind that most granolas have
a lot of sugar so you might not need the extra sweetness.
- While blueberry mixture is simmering, divide 1 C oats among 4 bowls and
add 1/2 cup of water to each bowl. Microwave each bowl for 1 minute and
set aside.
- When the blueberry mixture is ready, divide it between the 4 bowls,
spreading it over the top of the oats. Sprinkle granola over the top so
that you have three layers: cooked oats on the bottom, blueberry compote
in the middle, and granola covering the top. You can also add nuts to
either oat layer or the granola layer.
