Turkey meatballs in a tomato sauce
A relatively quick and easy recipe which pleases both kids and adults. Great
with pasta (warm) or on bread (cold meatballs). The leftover sauce can be
smeared on a toasted bread slice, covered with some grated cheese, and
broiled for 2-3 minutes in the oven. It's really 3 dishes in one!

Instructions
- Finely chop 1 medium onion, and very finely chop 1/2 medium onion.
- Heat 2 tbsp oil in a large pan. Add the finely chopped whole onion and 1
chopped celery stalk, and cook over low heat, stirring occasionally, for
about 10 minutes.
- In the meantime, put all the meatball ingredients into a large mixing
bowl: the very finely chopped onion, 1 lb ground turkey, 1 egg, 1/2 C
breadcrumbs, and 4 tbsp grated Parmesan cheese.
- Once the onions have turned golden but not burned, add 1 crushed garlic
clove, 1/2 tsp oregano, 1/2 tsp salt, 800-1000 ml tomato sauce, and 1.5-2
C water. Bring to a boil, then reduce the heat to a gentle simmer.
- Gently mix the meatball ingredients together with your hands.
- Form the mixture into small balls, about 1.5 inches each. You should get
about 20 meatballs.
- Gently place the meatballs into the tomato sauce and simmer for 30
minutes, until cooked through. Gently turn them over halfway through. The
meatballs are done when they reach at least 165 F throughout.
- If using, sprinkle 2 tbsp grated Parmesan cheese on top. Serve with a
side of your choice.
