Vegan tofu feta
This works surpsingly well in salads and bowls.

Instructions
- Drain a 14 oz package of tofu and put the tofu in a tofu press. Let it
sit for at least 15 minutes.
- Meanwhile, whisk the juice of 1 lemon, 1/4 C water, 2 tbsp miso paste,
1 pressed garlic clove, 1/2 tsp salt, 1/4 C fresh parsley, 1 tsp of dried
oregano, and black pepper to taste together in a medium bowl.
- Add the tofu and toss to coat.
- Allow the tofu to marinate for 30 minutes.
